Memory bank eats and ground bologna on white

I'm thinking food, those recipes that got lost or shoved aside.
These are some old favorites from the near and long past;

Tuna Noodle Casserole


I LOVED this meal as a kid. Really should try it again soon. 
Made with packed in oil tuna's the best!  

But not with Cheddar Cheese, nah..
 
Recently my daughter called the rolls for ham sandwiches "dusty buns" this made her momma chuckle. These are tasty. I'm serious.

POPPY SEED HAM AND SWISS SANDWICHES

3 tbsp. prepared mustard
1/2 lb. softened butter
3 tbsp. poppy seeds
1 chopped fine onion
Salt and pepper

Make an assembly line of the following: 16 slices ham 16 slices Swiss cheese 16 sq. pieces aluminum foil Spread buns with butter mixture on one side. Top with slice of ham, then Swiss cheese. Wrap up whole thing in foil. Bake at 350 degrees for 20 minutes.


Lady finger dessert with pistachio instant pudding, Cool Whip (or if you really want nostalgia try Dream Whip)
and Heath Bars ala --  the 1970's.
If you didn't get to the store early in the Christmas season to get a couple packages of Lady Fingers you were one sad and sorry woman.
For a decade or two every holiday buffet or church potluck featured this dessert.

2 pkgs. lady fingers
8 oz. Cool Whip
2 (3 oz.) pkgs. pistachio pudding, instant
3 1/2 c. milk

Mix pudding and milk. Split the lady fingers. Layer in 9"x13" pan.
First: lady fingers. Second: pudding. Third: Cool Whip. Then repeat.
Top with crushed Heath bars and refrigerate.

LOOK.. 
Must make. This year.

Here's one; Beef Stroganoff with Egg Noodles otherwise known as grandmother's fancy meal. 



Oh yum... it's ... Ground Bologna Sandwich Spread
Ingredients
1-1/2 lbs ring bologna
2 - 3 Baby sweet pickles
3 1/8" slices from 1 medium-size Spanish onion
1 cup mayonnaise
salt to taste
1 loaf white bread
Just one request; don't tell me what's in bologna.. please.


Equipment
1 old-fashioned hand-driven meat grinder
1 8" x 8" glass dish
1 large mixing bowl
1 2-quart storage container with lid
Cut the bologna into 4 sections for easier handling. Slit one side of each section lengthwise and remove the casing.
It's a food processor!
This is the best way to make ground bologna, mom would also put the onion
and pickles through the grinder.
  • Install discs onto the front of the meat grinder for a fairly small grind and grind the ring bologna into the glass dish. dump the ground bologna into the mixing bowl.
  • Finely-chop the sweet pickles till you have about 1/2 cup, and then do the same with the slices of onion. Add the chopped pickle and onion to the bologna in the mixing bowl, then add the mayonnaise and mix it all together till it's smooth. 
  • Transfer the finished spread to the storage bowl and refrigerate until it's ice cold. 
  • Make some sandwiches!
